La Compagnie Bretonne's low-salt mackerels caught in the Celtic Sea are processed at the best of the season from October to February. It is at this time that the fat content is the highest, which guarantees the softness of the fish.
Once received, the mackerels are cooked in a court-bouillon with a bouquet garni. The cooled mackerel fillets are then lifted with scissors
then delicately nested by hand. The sauces are prepared separately during casing and will coat the fillets before the setting stage.
