Sardines from the Compagnie Bretonne are caught seasonally , from May to October in Brittany and Vendée.
They are then worked fresh , headed and gutted with a knife.
Then they are fried in oil which allows it to give this candied and so delicious taste !
The olive oil used comes from organic farming.
